According to the assertions of the Italian Celiac Association (AIC), in order to be defined as 'gluten free", a food cannot contain more than 20 mg of gluten per kilogram, and since it is essential for the celiac to avoid foods containing even traces of gluten, great care must be taken when choosing gluten-free foods. Our B&B, which is particularly attentive to guests with celiac disease, offers certified products that do not contain gluten, the protein that triggers the symptoms of celiac disease in predisposed individuals. The foods, are prepared by verifying that in the production process there has been no contamination in fact gluten is an excellent thickener, and therefore it can be found hidden in many foods, such as the powder that coats salami, processed cheeses, stock cubes, ready-made soups and all precooked deli foods.
